Pollyanna and Curry

I have been so excited to make this pizza; I've been counting down to Friday. When I found Disney's "Glad Girl" Pollyanna at the Library I was equally excited! After all, what could be better than pineapple on pizza than Pollyanna?

So what is this special pizza that has me so excited? Well, as I was making my menu this week I found among my recipes Pineapple Chicken Curry over rice and I thought, a pineapple curry pizza sounded real good. So last night I made my Pineapple Chicken Curry, making the curry separate and reserving some for the pizza sauce. I cooked extra chicken and cut extra veggies. So tonight all I had to do was make the crust. There wasn't as much curry flavor as I had hoped, but over all, I thought it was a wonderful creation.

So here's the Pineapple Chicken Curry recipe:

  • 2 boneless, skinless chicken breast halves, cut into bite-size pieces
  • 1 can (12 fluid ounces) NESTLÉ® CARNATION® Evaporated Milk
  • 1 1/2 teaspoons cornstarch
  • 1 to 2 teaspoons yellow curry powder
  • 1 MAGGI Chicken Flavor Bouillon Cube
  • 1/4 teaspoon ground ginger
  • 1/8 teaspoon red pepper flakes or to taste
  • 1/2 red bell pepper, cut into 1/2-inch pieces
  • 1/2 onion, diced
  • 1 carrot, sliced
  • 1 1/2 cups fresh or frozen broccoli florets, thawed and drained
  • 1 can (8 ounces) pineapple chunks in juice, drained
  • 2 cups cooked rice

Directions

HEAT oil in large, nonstick skillet over medium-high heat. Add chicken; cook, stirring occasionally, for 3 minutes or until chicken is no longer pink. Reduce heat to medium; stir in evaporated milk, cornstarch, curry powder, bouillon, ginger and red pepper flakes. Continue cooking until mixture begins to gently simmer and bouillon is dissolved.

STIR in bell pepper and broccoli (if using frozen broccoli, add for last 3 minutes). Cover; gently simmer for 6 minutes or until broccoli is tender. Remove from heat; stir in pineapple. Serve with cooked rice.
Now, to prepare for the pizza, I took the chicken out the pan, made up the curry, removed about 1/2 cup of the curry, then added the meat and veggies back in. Also, like I said, as I was cutting the veggies, I chopped up what I needed for tonight.

Well, in addition to making pizza and watching Pollyanna, I am at the same time talking to a lender and telling Dave about the papers he needs to sign to make an offer on a house. With everything else going on tonight, we didn't finish Pollyanna, but I'm sure you are all smiling just knowing that we had this classic feel good movie on tonight.

  2. No worries, we'll have it for 2 weeks. My goal is to watch it so much the kids fall in love with it like I did.
